What simmers in a traditional Malabar clay pot is more than just a fish curry.

It is the taste of a family tradition that has travelled through four generations.

The story of Pathoos Fish Masala begins with Kunjayisha, whose traditional spice blend became part of our family’s kitchen. Her daughter, Nabeesa, learned and carried that recipe forward. Then my mother, Pathu, inherited the same blend and continued preparing it for our family.

For generations, the recipe was never written down in kilograms or grams.

It was measured by hand.

A handful of this.
A little of that.
The right amount of chilli.
The right balance of spices.

And most importantly, the taste had to be right.

A Recipe I Didn't Want to Lose

As Pathu’s son, I grew up with this flavour.

But I also understood a problem.

When a family recipe exists only in someone’s hands and memory, it can become difficult to preserve exactly for the next generation — especially when we want to make it available to people outside our own home.

The story behind the recipe

So I decided to preserve and standardize it properly.

With my Diploma in Bakery & Confectionery from the Kerala Government, I brought a more systematic approach to our traditional recipe.

I carefully studied the original hand measurements and converted them into precise weights, documenting the recipe ingredient by ingredient.

We also went further by identifying the specific chilli varieties used in the traditional blend rather than simply recording “chilli” as a generic ingredient.

This was important to us.

Because if we are going to share a family recipe, we want to know exactly what goes into it.

Keeping the Traditional Character

The standardized recipe is prepared with carefully selected raw spices.

Each batch is carefully inspected and hand-sorted to remove damaged or inferior ingredients. The spices are washed and naturally sun-dried under the Kerala sun.

We have not tried to turn our family’s recipe into something complicated.
